GRILLED VEGGIE AND FISH TACOS
Ingredients:
organic blue corn hard taco shells
red and orange peppers
onion
cherry tomatoes
yellow squash
zucchini
mushrooms
fish (shrimp or fish of choice)
guacamole (or homemade guacamole)
salsa (or homemade salsa)
Preparation:
Cut the veggies into wedges and marinate in EVOO and garlic. Put veggies on skewer and grill.
Cook fish on grill, or saute shrimp with garlic and EVOO on skillet.
Prepare taco shells with veggies, fish topping with guacamole and salsa.
